Here's a scene from one of the film's many cockfighting sequences, this one filmed on the outskirts of Toccoa. The SPCA showed up to protest the cruelty the animals would have to endure for the entertainment of movie goers and they were assured by the filmmakers that rubber spurs were being used, as opposed to the steel spurs used in actual cockfights.
Despite the presence of rubber spurs, actual cockfights were staged and filmed for the production. Due to evolving sensitivities about the treatment of animals, I don't think it's possible that this movie be made today. As one who has no appetite whatsoever for animal fights orchestrated for the entertainment of humans, I'm definitely OK with that.
